Banana bread

Ingredients

1/2 cp butter

1 cp brown sugar (or use Agave Nectar. Use 75% less of this nectar than you would of regular sugar. ¼ cup of Agave Nectar= 1 cup of sugar. Very healthy substitute, low glycemic, etc.).

2 eggs

3 bananas (good sized and very ripe)

2 cps wheat flour (freshly ground wheat)

1 tsp baking soda

1/2 tsp salt

1 tsp pure vanilla (Mexican vanilla)

1 tsp  pomegranate molasses

1 Tb ground flaxseed (freshly ground flaxseed)

1/2 cp finely chopped pecans

Preheat oven at 350 degrees. Mix butter, sugar, and eggs. Peel banana, mash down with a fork, add to the butter mixture and stir.  Add flour, salt, vanilla, molasses, flaxseed and mix. Then, blend in the pecans and baking soda. Grease 2 bread pans and sprinkle with flour. Divide mixture in half and pour. Bake at 350 degrees for 45 minutes.

Enjoy without feeling the guilt!
